4 large carrots, peeled and grated

1/2 cup raisins (preferably golden)

1/4 cup slivered almonds, lightly toasted

1/2 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (optional, for a kick)

2 tablespoons honey or maple syrup

3 tablespoons fresh lemon juice

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Fresh parsley or mint leaves for garnish

In a large mixing bowl, combine the grated carrots and raisins, stirring thoroughly.

    In a separate small bowl, whisk together the ground cumin, ground cinnamon, cayenne pepper (if using), honey or maple syrup, lemon juice, and olive oil until well combined.

      Pour the dressing over the carrot mixture and toss gently until the carrots are evenly coated.
