1 cup almond butter (smooth)

1/4 cup honey or maple syrup

1/2 cup rolled oats

1/2 cup shredded coconut

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)

Pinch of sea salt

Instructions
 

In a large mixing bowl, combine the almond butter and honey (or maple syrup) until smooth and creamy.

    Stir in the rolled oats, shredded coconut, ground flaxseed, vanilla extract, and sea salt. Mix until thoroughly combined.

      If desired, fold in the dark chocolate chips for a sweet touch.

        Use your hands or a spoon to form the mixture into small balls or flatten them into cookie shapes on a baking sheet lined with parchment paper.

          Place the baking sheet in the refrigerator for about 30 minutes to allow the cookies to firm up.

            Once set, remove the cookies from the fridge and store them in an airtight container in the refrigerator for up to a week.
