Ingredients

2 cups crushed vanilla wafers

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

3 ripe bananas, sliced

1 cup banana pudding mix (instant)

2 cups cold milk

Sliced bananas and crushed vanilla wafers for topping

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed vanilla wafers and melted butter. Mix until the crumbs are well coated. Press this mixture into the bottom of a 9-inch springform pan to form an even crust. Refrigerate the crust for about 30 minutes to set.

Make the Filling: In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

Whip the Cream: In a separate bowl, whip the heavy cream with a mixer until soft peaks form.

Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture until well combined.

Add Banana Pudding: In another bowl, whisk together the banana pudding mix and cold milk for 2 minutes until thickened. Fold the pudding into the cream cheese mixture until fully combined.

Layer the Cheesecake: Pour half of the cheesecake filling onto the crust, smooth it out, and layer half of the sliced bananas on top. Repeat with the remaining filling and bananas.

Chill: Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to let it set completely.

Serve: Once set, remove the sides of the springform pan. Top the cheesecake with additional sliced bananas and crushed vanilla wafers before serving.
