2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 cup granulated sugar

16 oz cream cheese, softened

1 cup sour cream

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 teaspoon salt

Instructions
 

In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until well blended and crumbly.

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Use the back of a measuring cup to compact it evenly.

      In another bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

        Gradually add granulated sugar, beating until fully incorporated and the mixture is smooth.

          Add sour cream, vanilla extract, lemon juice, and salt. Beat again until all ingredients are well combined and the mixture is fluffy.

            Pour the cream cheese filling over the prepared graham cracker crust in the springform pan. Use a spatula to spread it evenly.

              Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to set properly.

                Once set, carefully remove the sides of the springform pan. If desired, top the cheesecake with whipped cream and fresh berries for garnish.
