Ingredients

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 1/2 cups fresh strawberries, pureed

1 cup fresh strawberries, sliced for topping

Mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, mix the crushed graham crackers and melted butter until well combined. Press the mixture firmly into the bottom of 6 individual dessert cups or a large springform pan to form a crust. Place in the refrigerator to chill while preparing the filling.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and creamy.

Incorporate the Whipped Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain, being careful not to deflate the whipped cream.

Add Strawberry Puree: Fold in the strawberry puree into the cheesecake mixture until evenly distributed. The mixture should have a lovely pink hue.

Assemble the Cheesecakes: Spoon the cheesecake filling over the prepared crust in the dessert cups or springform pan, smoothing the top with a spatula.

Chill: Cover with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow the cheesecakes to set fully.

Serve: Once set, remove from the refrigerator and top with sliced fresh strawberries. Garnish with mint leaves if desired.
