2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional, for a touch of sweetness)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.

        If using, stir in the honey for a hint of sweetness.

          Pour in the chilled buttermilk gradually, stirring gently with a wooden spoon until the mixture just comes together. Be careful not to overmix; a few lumps are okay.

            Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Fold it over itself several times (this creates those flaky layers), then gently roll it out to about 1 inch thick again.

              Use a floured biscuit cutter (or the rim of a glass) to cut out biscuits, being careful not to twist the cutter as you press down. Place the biscuits on the prepared baking sheet, ensuring they’re touching for soft edges.

                Gather any leftover dough, pat it into a 1-inch thickness, and cut out more biscuits until all the dough has been used.

                  Bake in the preheated oven for 12-15 minutes or until the tops are golden brown and flaky.

                    Once baked, remove from the oven and let cool slightly before serving.
