2 cups all-purpose flour

1 cup warm water (110°F)

2 teaspoons active dry yeast

1 teaspoon sugar

2 tablespoons olive oil

1 teaspoon salt

1 cup mixed olives (green and black), pitted and chopped

1 tablespoon dried oregano

1 teaspoon rosemary, crushed

Coarse sea salt for topping

Instructions
 

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

      Mix until a dough begins to form, then knead for about 5-7 minutes on a lightly floured surface until smooth and elastic.

        Add the chopped olives, dried oregano, and crushed rosemary into the dough, kneading gently until well incorporated.

          Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

            Preheat your oven to 375°F (190°C).

              Punch down the risen dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.

                Let it rest for another 30 minutes, then sprinkle the top with coarse sea salt.

                  Use a sharp knife to make a few shallow slashes on the top of the loaf for decoration.

                    Bake in the preheated oven for about 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

                      Allow the bread to cool on a wire rack before slicing.
