Ingredients
  

4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

4 tablespoons olive oil

4 cloves garlic, minced

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, garlic, Italian seasoning, paprika, salt, and pepper. Toss until the potatoes are well coated.

      Spread the seasoned potatoes evenly in a large baking dish or a rimmed sheet pan.

        In the same mixing bowl, coat the chicken thighs with the remaining 2 tablespoons of olive oil, salt, pepper, and half of the grated Parmesan cheese.

          Place the chicken thighs on top of the potatoes in the baking dish.

            Sprinkle the remaining Parmesan cheese over the chicken and potatoes for an extra cheesy crust.

              Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C) and the potatoes are tender.

                Once cooked, remove the dish from the oven and let it rest for 5 minutes.

                  Garnish with freshly chopped parsley before serving.
