8 oz (about 2 cups) penne or rigatoni pasta

12 oz smoked sausage, sliced

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

4 cups chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (adjust for heat preference)

Salt and pepper to taste

1 cup spinach leaves

1/2 cup shredded mozzarella cheese

Fresh basil or parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the sliced smoked sausage and sauté for 3-4 minutes until they start to brown.

      Add the diced onion, minced garlic, and red bell pepper to the pot. Sauté for another 5 minutes, until the vegetables are softened.

        Stir in the halved cherry tomatoes and cook for 2 more minutes, allowing them to release their juices.

          Add the uncooked pasta, chicken broth, Italian seasoning, crushed red pepper flakes, salt, and pepper to the pot. Stir everything together until well combined.

            Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 12-15 minutes, or until the pasta is cooked al dente and most of the liquid is absorbed. Stir occasionally to prevent sticking.

              Remove the pot from the heat and fold in the spinach leaves until wilted.

                Sprinkle the shredded mozzarella cheese over the top, cover again for 2-3 minutes until the cheese is melted.

                  Fluff the pasta with a fork to combine and serve while warm, garnished with fresh basil or parsley if desired.
