4 salmon fillets (6 ounces each)

2 cups fresh spinach, washed and roughly chopped

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon butter

½ cup heavy cream

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Zest of 1 lemon for garnish

Fresh parsley, chopped for garnish

Prepare the Salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon, skin side down if applicable, and cook for about 4-5 minutes until the skin is crispy and golden brown. Flip the fillets carefully and cook for an additional 4-5 minutes until they are just cooked through. Remove the salmon from the pan and set aside on a warm plate.

      Sauté the Vegetables: In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cherry tomatoes. Cook for about 2-3 minutes until the spinach is wilted and the tomatoes are slightly softened.

        Make the Cream Sauce: Pour in the heavy cream and lemon juice, stirring to combine. Allow the mixture to simmer for about 2-3 minutes until it thickens slightly. If desired, sprinkle in red pepper flakes for a kick. Season the sauce with salt and pepper to taste.
