1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 (8 oz) packages Philadelphia Cream Cheese, softened

1 cup powdered sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

Zest of 1 lemon

2 tablespoons lemon juice

A pinch of salt

Preheat your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well-coated and resemble wet sand.

      Press the crumb mixture firmly into the bottom of the prepared baking pan to form an even layer. Use the back of a measuring cup for a smooth finish. Bake the crust for 10 minutes, then let it cool while you prepare the filling.

        In a large bowl, beat the softened Philadelphia Cream Cheese until smooth and creamy, about 2-3 minutes.

          Gradually add the powdered sugar, mixing until fully incorporated and creamy.

            Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract, sour cream, lemon zest, lemon juice, and a pinch of salt. Blend until the mixture is silky smooth, ensuring no lumps remain.

              Pour the cheesecake filling over the cooled graham cracker crust and smooth out the top.

                Bake in the preheated oven for 25-30 minutes or until the edges are set but the center still has a slight jiggle.

                  Turn off the oven and crack the door open, allowing the cheesecake bars to cool slowly for about 1 hour.

                    Once cooled, transfer the bars to the refrigerator and chill for at least 4 hours, preferably overnight for the best texture.

                      Once chilled, lift the cheesecake out of the pan using the parchment overhang and cut into squares.
