1 large ripe pineapple, peeled and cored

1 cup coconut water

1/2 cup fresh lime juice

2 tablespoons agave syrup or honey (optional, to taste)

1/2 teaspoon grated ginger (optional)

Fresh mint leaves for garnish

Lime slices for garnish

Instructions
 

Begin by cutting the pineapple into chunks, reserving a few slices for garnish.

    In a blender, combine the pineapple chunks, coconut water, fresh lime juice, and agave syrup/honey (if using).

      Blend until smooth and well combined.

        If you prefer a smoother drink, strain the mixture through a fine-mesh sieve to remove the pulp.

          Rinse the blender and pour the strained juice back in, adding the grated ginger for a subtle spicy kick. Blend briefly to incorporate.

            Fill serving glasses with crushed ice and pour the pineapple mixture over the ice until the glass is three-quarters full.

              Garnish each drink with a fresh mint sprig and a lime slice on the rim of the glass.
