1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons brown sugar

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

1 cup crushed pineapple, drained

Maraschino cherries for garnish

Whipped cream for serving (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a medium bowl, mix the graham cracker crumbs, melted butter, and brown sugar until combined.

      Press the graham cracker mixture firmly into the bottom of 12 cupcake liners in a muffin tin, creating a crust. Bake for 5 minutes, then remove from the oven and set aside to cool.

        In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and continue to beat until well combined.

          Mix in the vanilla extract followed by the eggs, one at a time, beating well after each addition.

            Gently fold in the crushed pineapple until evenly distributed throughout the batter.

              Pour the cheesecake batter over the prepared crusts, filling each cupcake liner about 3/4 full.

                Bake in the preheated oven for 20-25 minutes or until the centers are just set and a toothpick inserted comes out clean.

                  Allow the cheesecakes to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

                    Refrigerate the cheesecakes for at least 2 hours to set properly before serving.

                      Before serving, top each cheesecake with a dollop of whipped cream and a maraschino cherry for decoration.
