1 cup shelled pistachios, chopped

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1/2 cup dried cranberries (optional)

Zest of 1 lemon

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. Set aside.

      In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

          Gradually add the dry ingredient mixture to the wet ingredients, alternating with buttermilk. Mix until just combined. Be careful not to overmix.

            Gently fold in the chopped pistachios and dried cranberries (if using) until evenly distributed.

              Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

                  Once done, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
