4 large Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium carrot, diced

1 stalk celery, diced

4 cups vegetable broth

1 cup heavy cream

1 tablespoon fresh dill, chopped

2 tablespoons olive oil

Salt and pepper, to taste

Optional garnish: crispy bacon bits or croutons

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and continue to cook for an additional 1-2 minutes until fragrant.

      Stir in the diced carrot and celery, cooking for another 3-4 minutes until they begin to soften.

        Add the diced potatoes to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes until the potatoes are tender.

          Use a potato masher or immersion blender to mash some of the potatoes for a creamier texture, leaving some chunks for heartiness.

            Stir in the heavy cream and bring the soup back to a gentle simmer. Add the chopped dill and season with salt and pepper to taste.

              Remove from heat and let it sit for a few minutes before serving to enhance the flavors.

                Serve the soup hot, garnished with crispy bacon bits or croutons if desired, and a sprinkle of fresh dill on top.
