4 large Portobello mushrooms, cleaned and stems removed

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (panko for extra crispiness)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional for extra flavor)

Olive oil spray or canola oil for frying

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Slice the Portobello mushrooms into fries, about ½ inch thick.

      Set up a breading station with three separate shallow bowls.

        - In the first bowl, place the flour seasoned with salt, pepper, and half of the garlic and onion powder.

          - In the second bowl, add the beaten eggs.

            - In the third bowl, mix the breadcrumbs with the remaining garlic powder, onion powder, smoked paprika, and Parmesan cheese (if using).

              Dip each Portobello fry first into the flour mixture, ensuring it's fully coated. Shake off the excess.

                Next, dip it into the beaten eggs, letting any excess drip off.

                  Finally, coat the fry in the breadcrumb mixture, pressing gently to adhere well. Place the coated fries on the prepared baking sheet.

                    Once all mushrooms are coated, lightly spray the fries with olive oil or canola oil for extra crispiness.

                      Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through for even cooking.

                        Remove from the oven and let them cool slightly. Sprinkle with fresh chopped parsley for a pop of color.

                          Serve immediately with your favorite dipping sauce, such as ranch or aioli.
