2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, chopped

4 cups beef broth

1 can (14 oz) diced tomatoes, with juices

2 potatoes, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 package (12 oz) potato gnocchi

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the pot in batches to avoid overcrowding. Sear the beef for about 4-5 minutes, turning occasionally until browned on all sides. Remove the beef and set aside.
