Ingredients

1 cup pure pumpkin puree

1/2 cup almond butter (or peanut butter)

1/4 cup maple syrup

1/2 cup rolled oats

1/2 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

1/4 teaspoon salt

1/3 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the pumpkin puree, almond butter, and maple syrup. Stir until smooth and well blended.

In a separate bowl, whisk together the rolled oats, whole wheat flour, baking powder, cinnamon, nutmeg, ginger, and salt.

Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. If using, fold in the chocolate chips and walnuts for added texture.

Use a spoon or cookie scoop to drop dough onto the prepared baking sheet, leaving space between each cookie. Flatten them slightly with the back of the spoon.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the cookies are set.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Prep Time: 10 minutes | Total Time: 25 minutes | Servings: 12 cookies
