Ingredients

1 cup pumpkin puree (fresh or canned)

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

Brown Butter Frosting:

1/2 cup unsalted butter (for frosting)

2 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (more if needed)

Pinch of salt

Instructions

Prepare the Pumpkin Cookies:

    - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

      - In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

        - Beat in the pumpkin puree, egg, and vanilla until well combined.

          - In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

            - Gradually add the dry ingredients to the wet mixture until just combined. Fold in chopped pecans or walnuts if using.

              Bake the Cookies:

                - Using a cookie scoop or tablespoon, drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

                  - Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the centers look set.

                    - Allow cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

                      Make the Brown Butter Frosting:

                        - In a small saucepan, melt the 1/2 cup of unsalted butter over medium heat. Let it cook until it starts to foam and turns a golden brown, about 5-7 minutes, stirring frequently to prevent burning. Remove from heat and allow to cool slightly.

                          - In a mixing bowl, combine the browned butter with powdered sugar, vanilla extract, and a pinch of salt. Add milk, mixing until smooth and creamy. Adjust the consistency by adding more milk if necessary.

                            Frost the Cookies:

                              - Once the cookies are completely cooled, spread a generous layer of the brown butter frosting on top of each cookie.

Prep Time: 20 minutes | Total Time: 1 hour | Servings: 24 cookies

                                  - Presentation Tips: Arrange the cookies on a decorative platter, and consider adding a sprinkle of cinnamon on top of the frosting for extra flair!
