2 cups shredded Oaxaca cheese (or a mix of Monterey Jack and Mozzarella)

1 cup chorizo, diced (or plant-based chorizo)

1 small onion, finely chopped

1 jalapeño, deseeded and minced

2 cloves garlic, minced

1/2 cup fire-roasted tomatoes, drained

1/4 cup cilantro, chopped

1 tablespoon olive oil

Salt and pepper to taste

Tortilla chips or warm tortillas, for serving

Instructions
 

In a large oven-proof skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.

    Stir in the minced jalapeño and garlic, cooking for an additional 1-2 minutes until fragrant.

      Add the diced chorizo to the skillet and cook until browned and cooked through, about 5-7 minutes. Use a wooden spoon to break it apart as it cooks.

        Mix in the fire-roasted tomatoes and season with salt and pepper to taste. Let it simmer for 3-4 minutes to meld the flavors.

          Reduce the heat to low and sprinkle the shredded cheese evenly over the chorizo mixture. Cover the skillet and let it sit for 2-3 minutes, until the cheese is melted and bubbly.

            For an extra touch, place the skillet under the broiler for 2-3 minutes for a crispy, golden top (watch closely to prevent burning!).

              Remove from the oven, and sprinkle chopped cilantro on top before serving.
