2 packs of instant ramen noodles (discard the seasoning packets)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 cup broccoli florets

1 bell pepper, thinly sliced (red or yellow)

1 carrot, julienned

1 cup snap peas

2 green onions, chopped (white and green parts separated)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 teaspoon chili paste (adjust to taste)

1 tablespoon toasted sesame seeds

Salt and pepper to taste

Instructions
 

Cook the ramen noodles according to the package instructions, drain, and set aside.

    In a large skillet or wok, heat the sesame oil and vegetable oil over medium-high heat.

      Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

        Add the broccoli, bell pepper, carrot, and snap peas to the skillet. Stir-fry for about 4-5 minutes until the veggies are tender-crisp.

          Toss in the cooked ramen noodles, ensuring they break apart if clumped together.

            Pour in the soy sauce, hoisin sauce, and chili paste. Mix everything thoroughly, allowing the noodles to absorb the sauces.

              Stir in the chopped green onions (white parts), and season with salt and pepper to taste. Continue to stir-fry for another 2 minutes.

                Once everything is heated through, remove from heat and transfer to a serving dish.

                  Garnish with the green onion tops and sprinkle toasted sesame seeds on top before serving.
