2 lbs Yukon gold potatoes, washed and scrubbed

4 tablespoons unsalted butter, melted

1/2 cup heavy cream

3 cloves garlic, minced

1 teaspoon rosemary, fresh and finely chopped

1 teaspoon thyme, fresh and finely chopped

Salt to taste

Black pepper to taste

1/2 cup grated Parmesan cheese

3 tablespoons chopped fresh chives for garnish

Boil the Potatoes: Place the Yukon gold potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring to a boil over high heat. Reduce to a simmer and cook until the potatoes are fork-tender, about 15-20 minutes.

    Drain and Steam: Once cooked, drain the potatoes and return them to the pot for about 5 minutes to steam off excess moisture.

      Make the Cream Mixture: In a small saucepan, combine the melted butter, heavy cream, minced garlic, chopped rosemary, and thyme over low heat, stirring until the garlic softens (about 2-3 minutes). Do not let it boil.

        Mash the Potatoes: Transfer the drained potatoes to a large mixing bowl. Use a potato masher to partially smash the potatoes, leaving some lumps for texture.

          Mix in Flavors: Pour the creamy garlic mixture over the smashed potatoes. Add salt, black pepper, and grated Parmesan cheese. Stir gently until well combined, being careful not to over-mix.

            Preheat the Oven: Preheat your oven to 425°F (220°C).
