2 ribeye steaks (about 1-inch thick)

Salt and black pepper to taste

2 tablespoons olive oil

1 large onion, thinly sliced

1 tablespoon unsalted butter

1 teaspoon dried thyme

1 teaspoon garlic powder

4 medium-sized russet potatoes, cut into fries

2 tablespoons cornstarch (for crispiness)

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Prepare the Fries: Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      Coat the Fries: In a large bowl, toss the dried fries with cornstarch, paprika, salt, and a drizzle of olive oil until evenly coated.

        Bake the Fries: Spread the fries in a single layer on the prepared baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

          Cook the Onions: In a skillet over medium heat, melt the butter with the olive oil. Add the sliced onions and sprinkle them with salt, thyme, and garlic powder. Stir occasionally, cooking until the onions are caramelized and golden brown, about 15-20 minutes.

            Season the Steaks: While the onions are cooking, season the ribeye steaks on both sides with salt and black pepper.
