Ingredients
  

1 pound baby carrots, scrubbed and trimmed

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon smoked paprika

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh thyme sprigs, for garnish

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, honey, smoked paprika, fresh thyme, salt, and pepper. Whisk together until well blended.

      Add the baby carrots to the bowl and toss them gently in the honey mixture until evenly coated.

        Spread the carrots out in a single layer on a baking sheet lined with parchment paper.

          Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, turning them halfway through for even roasting.

            Remove the carrots from the oven and let them cool for a few minutes.

              Drizzle any remaining honey mixture from the bowl over the carrots before serving.

                Garnish with fresh thyme sprigs for a pop of color.
