1 head of garlic

4 slices of artisanal bread (sourdough or ciabatta)

4 slices of sharp cheddar cheese

2 tablespoons unsalted butter, softened

1 tablespoon olive oil

1 tablespoon fresh parsley, chopped

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves, drizzle with olive oil, and wrap it in aluminum foil. Place it in the oven for about 30-35 minutes or until the cloves are golden and tender. Once cool, squeeze the garlic from the skins into a bowl and mash it with a fork.

    Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of bread.

      Assemble the Sandwich: On the unbuttered side of two slices of bread, spread a generous amount of the mashed roasted garlic. Top with a slice of cheddar cheese.
