1 cup ricotta cheese

1 cup roasted garlic (about 2 whole bulbs)

¼ cup grated Parmesan cheese

1 tablespoon olive oil

Fresh basil leaves for garnish

Make the Pasta Dough: In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Using a fork, gently whisk the eggs while gradually incorporating the flour from the edges of the well until the dough begins to form. Knead for about 5 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling: In a bowl, mix the ricotta cheese, roasted garlic, Parmesan cheese, salt, and pepper until well combined. Taste and adjust seasoning as needed.

      Roll Out the Dough: After resting, divide the dough into quarters. Keep the sections you're not working with covered. Roll out one-quarter of the dough into a thin sheet (about 1/16-inch thick) using a pasta machine or rolling pin.

        Fill the Ravioli: Place teaspoonfuls of the filling about 2 inches apart on one half of the pasta sheet. Brush the edges of the dough with water to help seal. Fold the other half of the pasta over the filling. Press down around each mound of filling to remove air and seal the edges. Use a ravioli cutter or knife to cut them apart.

          Cook the Ravioli: In a large pot of salted boiling water, carefully add the ravioli and cook for about 4-5 minutes, or until they float to the top. Use a slotted spoon to remove them from the water and drain.

            Prepare the Sauce: In a skillet, heat olive oil over medium heat. Add the cooked ravioli and sauté gently for 2-3 minutes until they’re coated and heated through.

              Serve: Plate the ravioli, garnishing with fresh basil leaves and an extra sprinkle of Parmesan cheese.
