2 lbs pork loin

2 tablespoons fresh rosemary, chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

2 apples, peeled, cored, and diced (preferably Granny Smith)

1/2 cup maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Preheat your oven to 375°F (190°C).

    In a small bowl, mix together the chopped rosemary, minced garlic, olive oil, salt, and pepper. This will be your herb paste.

      Rub the herb paste all over the pork loin, making sure to coat it evenly.

        Place the pork in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).

          While the pork is roasting, prepare the maple apple sauce. In a medium saucepan, combine the diced apples, maple syrup, lemon juice, and ground cinnamon.

            Cook over medium heat, stirring occasionally, until the apples are soft and the mixture is nicely combined, about 15-20 minutes.

              Once the pork is done, remove it from the oven and let it rest for about 10 minutes before slicing.

                Serve slices of the pork topped with the warm maple apple sauce.
