Saucy Hungarian Red Potato Goulash

4 large red potatoes, peeled and diced

1 lb (450 g) beef chuck, cut into 1-inch cubes

1 large onion, finely chopped

2 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon caraway seeds

1 red bell pepper, diced

4 cups low-sodium beef broth

1 can (14 oz) diced tomatoes, undrained

2 tablespoons tomato paste

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Heat the olive oil in a large Dutch oven over medium heat. Add the beef chuck and sear on all sides until browned (about 5-7 minutes). Remove the beef and set it aside.

    In the same pot, add the onions and garlic. Sauté until the onions are translucent (about 5 minutes).

      Stir in the sweet paprika, smoked paprika, thyme, and caraway seeds, and cook for an additional minute until fragrant.

        Add the red bell pepper and diced potatoes to the pot, mixing everything well to coat with the spices.

          Return the browned beef to the pot. Pour in the diced tomatoes, tomato paste, and beef broth. Stir to combine all the ingredients.

            Season with salt and pepper, then bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 45 minutes, or until the beef is tender and the potatoes are cooked through.

              Taste and adjust the seasoning if necessary. If the goulash is too thick, you can add more broth or water to reach your desired consistency.

                Serve hot, garnished with fresh parsley.
