1 pound breakfast sausage, casings removed

6 large eggs

2 cups whole milk

1 cup shredded cheddar cheese

1 cup diced potatoes (fresh or frozen)

1/2 cup diced bell peppers (any color)

1/2 cup chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Optional: hot sauce for serving

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with cooking spray or olive oil.

    In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbled, about 5-7 minutes. Drain the excess fat and set aside.

      In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and pepper until well combined.

        Add the cooked sausage, diced potatoes, bell peppers, and half of the shredded cheddar cheese to the egg mixture. Stir to incorporate all the ingredients evenly.

          Pour the mixture into the prepared baking dish, spreading it out evenly.

            Sprinkle the remaining cheddar cheese on top.

              Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the center and lightly golden on top.

                Remove from the oven and let it cool for 5 minutes before slicing.

                  Garnish with chopped green onions and serve warm. Drizzle with hot sauce if desired for a spicy kick.
