Sausage and Egg Breakfast Rolls

4 breakfast sausages, casings removed

4 large eggs

1/4 cup milk

1/2 cup sharp cheddar cheese, shredded

1/4 cup green onions, sliced

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

4 large flour tortillas

2 tablespoons butter

Optional: Salsa or hot sauce for serving

Instructions
 

In a medium skillet over medium heat, add the breakfast sausages. Cook until browned and fully cooked through, breaking up the meat with a spatula into small pieces, about 5-7 minutes. Remove from skillet and set aside.

    In a mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper.

      In the same skillet, reduce heat to low. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are just set but still creamy, about 4-5 minutes.

        Add the cooked sausage back to the skillet with the scrambled eggs. Stir in the cheddar cheese and sliced green onions, allowing the cheese to melt slightly.

          Warm the tortillas in a separate dry skillet for about 30 seconds on each side until pliable.

            To assemble the breakfast rolls, place a generous scoop of the sausage and egg mixture onto the center of each tortilla. Fold the sides in and then roll it up tightly from the bottom to create a wrap.

              In the same skillet, melt butter over medium heat. Place the wraps seam-side down and grill for 2-3 minutes on each side until golden brown and crispy.

                Remove from skillet and slice each roll diagonally in half.
