1 package of puff pastry (2 sheets)

1 cup cooked sausage, crumbled (Italian or breakfast sausage works well)

1 cup cranberry sauce (homemade or store-bought)

8 ounces Brie cheese, cut into small wedges

1 egg, beaten (for egg wash)

Fresh rosemary, for garnish (optional)

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the puff pastry sheets and cut them into 3-inch squares. Place them on the prepared baking sheet.

      In a bowl, combine the crumbled sausage, cranberry sauce, and a pinch of salt and pepper. Stir until well mixed.

        Place a small wedge of Brie cheese in the center of each pastry square.

          Top the Brie with a spoonful of the sausage and cranberry mixture, ensuring to leave some space around the edges.

            Fold the corners of the pastry over the filling to create a small pocket and pinch the edges to seal.

              Brush the tops of the pastry bites with the beaten egg to give them a golden color when baked.

                Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden.

                  Remove from the oven and let cool for a few minutes before garnishing with fresh rosemary if desired.
