1 lb breakfast sausage (mild or spicy, based on preference)

8 large eggs

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

4 cups frozen hash browns (thawed)

2 cups shredded cheddar cheese

1 cup diced bell peppers (red and green for color)

1/2 cup chopped green onions (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    In a large skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain any excess grease and set aside.

      In a mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

        In the prepared baking dish, evenly spread out the thawed hash browns to form the bottom layer.

          Layer the crumbled sausage over the hash browns and then sprinkle the diced bell peppers on top.

            Pour the egg mixture evenly over the sausage and hash browns, ensuring all ingredients are submerged.

              Finally, sprinkle the shredded cheddar cheese across the top of the casserole.

                Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the cheese is bubbly and golden.

                  Allow the casserole to cool for 5 minutes before slicing into squares.

                    Garnish the individual servings with chopped green onions before serving.
