4 large eggs

4 breakfast sausage links, cooked and crumbled

1 cup shredded cheddar cheese

4 large tortillas (flour or whole wheat)

1/2 cup milk

1/4 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

Fresh chives, chopped (for garnish)

Instructions
 

In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring often, until the eggs are just set but still moist. Remove from heat.

      In a separate bowl, combine the crumbled sausage with the cooked eggs, mixing in half the shredded cheese.

        Lay a tortilla flat on a clean surface. Spoon about 1/4 of the egg and sausage mixture onto the center of the tortilla, followed by a sprinkle of the remaining cheese.

          Carefully roll up the tortilla from the bottom, tucking in the sides as you go, to create a tight roll. Repeat with remaining tortillas.

            Place the roll-ups seam side down in the skillet and cook on medium heat for 2-3 minutes on each side, until the tortillas are golden brown and crisp.

              Remove the roll-ups from the skillet and let them cool slightly before slicing in half.
