1 pound breakfast sausage (spicy or mild, your choice)

8 large eggs

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese

1 cup diced bell peppers (mixed colors for vibrancy)

1 cup diced onion

6 slices of day-old bread, cubed (preferably white or sourdough)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, crumbled and cook the breakfast sausage until browned and fully cooked. Drain any excess grease and set aside.

      In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and pepper until well combined.

        Stir in the cooked sausage, diced bell peppers, diced onion, and three-quarters of the shredded cheddar cheese into the egg mixture.

          Grease a 9x13 inch baking dish. Evenly spread the cubed bread across the bottom of the dish.

            Pour the egg and sausage mixture over the bread, ensuring even coverage. Gently press down with a spatula to allow the bread to soak up the egg mixture.

              Sprinkle the remaining cheddar cheese over the top.

                Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is golden and bubbly.

                  Let the casserole cool for about 5 minutes before slicing and serving.

                    Garnish with freshly chopped parsley before serving.
