6 large croissants, preferably day-old

200g (7 oz) sliced deli ham

200g (7 oz) Gruyère cheese, grated

100g (3.5 oz) cream cheese, softened

2 tablespoons Dijon mustard

1 tablespoon honey

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 egg, beaten (for egg wash)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

    Prepare the Filling: In a medium bowl, mix the softened cream cheese, Dijon mustard, honey, and fresh thyme (or dried thyme) together until well combined. Season with salt and pepper to taste.

      Assemble the Croissants:

        - Slice each croissant in half horizontally, creating an outer layer and a bottom layer.

          - Spread a generous layer of the cream cheese mixture on the bottom half of each croissant.

            - Layer 2-3 slices of ham on top of the spread, followed by an ample amount of grated Gruyère cheese.

              - Place the top half of the croissant over the filling, pressing down gently to secure.

                Egg Wash: Place the assembled croissants on the prepared baking sheet. Brush the tops of each croissant with the beaten egg to give them a beautiful golden finish while baking.

                  Bake: Transfer the baking sheet to the preheated oven and bake for 15-18 minutes or until the croissants are golden brown and the cheese is melted.

                    Serve: Remove from the oven and let cool for a few minutes before serving. You can cut them in half for easy eating or serve them whole.
