1 pound salmon fillet, skin removed and cut into bite-sized cubes

4 tablespoons unsalted butter

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried dill (or 1 tablespoon fresh dill)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley or dill for garnish (optional)

Instructions
 

Begin by patting the salmon cubes dry with paper towels to remove excess moisture, which will help achieve a nice sear.

    In a large non-stick skillet, heat the olive oil over medium heat until hot.

      Carefully add the salmon cubes to the skillet in a single layer. Season with salt and pepper. Cook for about 4-5 minutes on each side, or until the salmon is golden brown and cooked through. Remove the salmon from the skillet and set aside.

        In the same skillet, reduce the heat to low and add the unsalted butter. Allow it to melt completely.

          Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

            Stir in the lemon juice, lemon zest, and dried dill. Let the mixture simmer for another minute to allow the flavors to meld.

              Gently place the cooked salmon bites back into the skillet and toss to coat in the lemon butter sauce. Cook for an additional minute just to warm them through and absorb the flavors.

                Remove from heat and transfer the salmon bites to a serving platter. If desired, garnish with freshly chopped parsley or dill for added color and freshness.
