1 can (15 oz) mixed beans (kidney, chickpeas, black beans), drained and rinsed

1 cup vegetable broth

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Optional: 1 cup fresh spinach or kale, chopped

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables soften.

    Add the minced garlic and diced red bell pepper to the pot. Stir and cook for another 2-3 minutes until fragrant.

      Sprinkle in the smoked paprika, ground cumin, oregano, and red pepper flakes. Stir well to toast the spices for 1 minute.

        Pour in the canned diced tomatoes (with juices) and vegetable broth. Bring the mixture to a simmer.

          Stir in the mixed beans and chopped spinach or kale (if using). Allow the soup to simmer for about 15-20 minutes, stirring occasionally.

            Season with salt and pepper to taste, adjusting spices as necessary.

              Remove from heat and let it sit for a few minutes to allow flavors to meld.

                Serve hot, garnished with fresh parsley or cilantro.
