4 large russet potatoes, thinly sliced

2 cups heavy cream

1 cup milk

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

2 teaspoons fresh thyme leaves

1 teaspoon fresh rosemary, chopped

Salt and pepper to taste

1/2 cup green onions, sliced (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with a little butter.

    In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Pour in the heavy cream and milk, stirring to combine. Allow it to warm slightly without boiling.

        Stir in the thyme, rosemary, salt, and pepper. Taste and adjust for seasoning.

          In the prepared baking dish, layer half of the sliced potatoes at the bottom.

            Pour half of the creamy garlic mixture over the potatoes, then sprinkle with half of the cheddar and Gruyère cheese.

              Repeat the layers by adding the remaining potatoes, followed by the rest of the cream mixture, finishing with the last bit of cheese on top.

                Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.

                  After 40 minutes, remove the foil and bake for an additional 20-30 minutes until the potatoes are tender and the top is golden brown and bubbly.

                    Allow the dish to rest for about 10 minutes before serving. Garnish with sliced green onions.
