Sheet Pan Lemon Salmon and Potatoes

4 salmon fillets (about 6 oz each)

1 lb baby Yukon gold potatoes, halved

1 lemon, zest and juice

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges, for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby Yukon gold potatoes, 2 tablespoons of olive oil, 1/2 the lemon zest, minced garlic, dried oregano, smoked paprika, salt, and pepper. Toss until the potatoes are evenly coated.

      Spread the seasoned potatoes on one side of a large parchment-lined baking sheet in a single layer.

        In the same bowl, add the salmon fillets. Drizzle with the remaining 1 tablespoon of olive oil, lemon juice, and the rest of the lemon zest. Season with salt and pepper.

          Place the salmon fillets next to the potatoes on the baking sheet, skin side down.

            Roast in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender and golden brown.

              Remove from the oven, garnish with fresh chopped parsley and serve with lemon wedges on the side.
