1 lb ground lamb or beef

1 onion, finely chopped

2 carrots, diced

2 celery stalks, diced

2 cloves garlic, minced

1 cup frozen peas

1 cup vegetable broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups mashed potatoes (made from about 4 large potatoes)

1/2 cup shredded cheddar cheese (optional)

Salt and pepper to taste

2 tablespoons olive oil

Instructions
 

Prepare the Mashed Potatoes: Peel and cut the potatoes into chunks. Boil them in salted water until fork-tender, about 15-20 minutes. Drain, and mash with a splash of milk, salt, and pepper until creamy. Set aside.

    Cook the Meat: In a large skillet, heat olive oil over medium heat. Add chopped onion, carrots, and celery, cooking until softened (about 5-7 minutes).

      Add Garlic: Stir in minced garlic and cook for an additional minute until fragrant.

        Brown the Meat: Increase the heat to medium-high, add the ground lamb or beef, and cook until browned. Use a wooden spoon to break up the meat as it cooks.

          Incorporate Flavors: Stir in the vegetable broth, tomato paste, Worcestershire sauce, thyme, rosemary, and a good pinch of salt and pepper. Bring the mixture to a simmer for 10 minutes, allowing it to thicken slightly.

            Add Peas: Stir in the frozen peas and mix well, then remove from heat.

              Assemble the Pie: Preheat your oven to 400°F (200°C). In a large baking dish, spread the meat mixture evenly. Top with mashed potatoes, smoothing them out with a spatula or the back of a spoon. If desired, sprinkle shredded cheese on top for added flavor.

                Bake: Place the dish in the oven and bake for 25-30 minutes, or until the top is golden and slightly crispy.
