Ingredients

8 oz egg noodles or lo mein noodles

1 lb shrimp, peeled and deveined

1 cup broccoli florets

1 bell pepper, thinly sliced (any color)

1 cup snap peas

3 cloves garlic, minced

2 tablespoons ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Cook the Noodles: Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until al dente, then drain and set aside.

Sauté the Shrimp: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and sauté until they are pink and opaque, about 3-4 minutes. Remove the shrimp from the pan and set aside.

Stir-Fry Vegetables: In the same skillet, add another tablespoon of sesame oil. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Then, toss in the broccoli, bell pepper, and snap peas. Stir-fry for about 4-5 minutes, or until the vegetables are tender but still crisp.

Combine Everything: Return the shrimp to the skillet with the vegetables. Add the cooked noodles, soy sauce, oyster sauce, and the cornstarch-water mixture. Stir well to combine and let everything cook together for 2-3 minutes, allowing the sauce to thicken and the flavors to meld.

Season and Serve: Taste the dish and season with salt and pepper as needed. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
