4-5 lbs pork shoulder, bone-in

2 tablespoons olive oil

1 tablespoon smoked paprika

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon ground cumin

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon chili powder

1 cup low-sodium chicken broth

1/2 cup apple cider vinegar

1/4 cup brown sugar

2 tablespoons Worcestershire sauce

1 large onion, sliced

4 cloves garlic, minced

Fresh parsley or cilantro for garnish

Pat the pork shoulder dry with paper towels. This helps in achieving a nice sear.

    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cumin, black pepper, salt, and chili powder to create a spice rub.

      Heat olive oil in a large skillet over medium-high heat. Once hot, sear the pork shoulder, browning it on all sides (about 4-5 minutes per side). This step adds depth to the flavor.

        Place the sliced onions and minced garlic at the bottom of a slow cooker. This forms a flavorful bed for the pork.

          In a separate bowl, whisk together the chicken broth, apple cider vinegar, brown sugar, and Worcestershire sauce.

            Once the pork is seared, place it on top of the onions in the slow cooker. Pour the broth mixture over the pork, covering it partially.

              Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily pulls apart with forks.

                After cooking, remove the pork shoulder carefully and place it on a cutting board. Let it rest for about 10 minutes before shredding.

                  Skim any excess fat from the liquid in the slow cooker. Optionally, you can reduce the cooking liquid on the stove for a thicker sauce.
