1 lb ground beef or turkey

1 onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes (with chilies, if desired)

2 cups beef or vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and set aside.

    In the slow cooker, combine the cooked meat, chopped onion, and minced garlic.

      Add the diced bell pepper, black beans, kidney beans, corn, diced tomatoes, and broth to the slow cooker.

        Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine all the ingredients.

          Cover and cook on low for 6 hours or on high for 3 hours, allowing flavors to meld and ingredients to soften.

            Once done, taste and adjust seasoning as necessary.

              Serve hot in bowls, topped with shredded cheddar cheese and a sprinkle of fresh cilantro.
