Ingredients

3-4 lb beef chuck roast

2 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon paprika

Salt and pepper to taste

4 medium carrots, cut into large chunks

3 medium potatoes, quartered

1 large onion, quartered

3 cups beef broth

1 tablespoon Worcestershire sauce

Instructions

Prepare the Beef: Pat the beef chuck roast dry with paper towels and season generously with salt and pepper on all sides.

Sear the Meat: In a large skillet, heat the olive oil over medium-high heat. Sear the roast for about 3-4 minutes on each side until browned. This step enhances the flavor and texture.

Make the Herb Mixture: In a small bowl, combine the minced garlic, thyme, rosemary, paprika, and a pinch of salt and pepper. Rub this mixture all over the seared roast.

Layer the Vegetables: Place the carrots, potatoes, and onion at the bottom of the slow cooker. This will create a bed for the roast to sit on and keep the vegetables flavorful.

Add the Roast: Carefully place the herb-infused roast on top of the vegetables in the slow cooker.

Add Broth and Sauce: Pour the beef broth and Worcestershire sauce evenly around the roast, ensuring that some liquid seeps under the meat and the vegetables.

Slow Cook: Cover the slow cooker with the lid and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.

Serving: Once cooked, remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and some of the cooking liquid spooned over the top.

                    - Presentation Tips: Serve the sliced roast beef on a large platter, arranged with the vegetables. Drizzle some of the cooking juices over the beef for added flavor and moisture. Garnish with fresh herbs such as parsley for a pop of color.
