Ingredients

1.5 lbs chicken thighs (bone-in, skinless for flavor)

1 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon grated ginger

3 cloves garlic, minced

1 red bell pepper, chopped

1 cup low-sodium chicken broth

1 teaspoon sesame oil

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Begin by placing the chicken thighs in the bottom of the slow cooker.

In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.

Pour the sauce mixture over the chicken thighs, ensuring they are well coated.

Add the chopped red bell pepper and chicken broth to the slow cooker, distributing them evenly.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the chicken is tender and can be shredded easily with forks.

Once cooked, use two forks to shred the chicken right inside the slow cooker, mixing it with the sauce for even flavor.

Serve hot, garnishing with sliced green onions and a sprinkle of sesame seeds for added texture and flavor.

Prep Time: 15 minutes | Total Time: 6-7 hours (slow cooker) | Servings: 4
