2 lbs ground beef (or 1 lb ground beef and 1 lb ground pork)

1 large onion, diced

3 cloves garlic, minced

2 red bell peppers, diced

1 green bell pepper, diced

2 cans (15 oz each) kidney beans, rinsed and drained

1 can (28 oz) diced tomatoes (with juice)

2 tablespoons tomato paste

2 tablespoons chili powder

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

1 cup beef broth

1 tablespoon olive oil

Instructions
 

In a large skillet over medium-high heat, add olive oil. Once hot, add the diced onions, garlic, and bell peppers. Sauté for about 5 minutes until they begin to soften.

    Add the ground beef (or pork/beef mix) to the skillet. Cook until browned and no longer pink, breaking it apart with a wooden spoon (about 7-10 minutes). Drain any excess fat.

      Transfer the cooked mixture to the slow cooker. Add kidney beans, diced tomatoes (with juice), and tomato paste.

        Sprinkle in the chili powder, smoked paprika, cumin, oregano, salt, black pepper, and cayenne pepper. Pour in the beef broth and stir until everything is well combined.

          Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible.

            Once ready, check seasoning and adjust with more salt or cayenne pepper if desired.

              Serve hot with your choice of toppings like shredded cheese, sour cream, chopped green onions, or cilantro.
