Ingredients

200g smoked salmon, thinly sliced

2 tablespoons capers, rinsed and drained

2 tablespoons all-purpose flour

3 tablespoons olive oil

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh chives, finely chopped

1 tablespoon lemon juice

Zest of 1 lemon

Freshly cracked black pepper, to taste

Sea salt, to taste

Instructions

Fry the Capers: Heat 2 tablespoons of olive oil in a small skillet over medium heat. Dredge the rinsed capers in flour, shaking off the excess. Once the oil is hot, add the capers to the pan and fry until they are crispy and golden brown, about 3-4 minutes. Remove them from the skillet and place on a paper towel to absorb excess oil.

Prepare the Salmon: On a large plate or platter, lay out the slices of smoked salmon in a single layer, slightly overlapping them to create an elegant presentation.

Herb Mixture: In a small bowl, combine the chopped dill, chives, lemon juice, and lemon zest. Season with a pinch of sea salt and freshly cracked black pepper. Mix well to combine all the flavors.

Assemble the Dish: Drizzle the remaining tablespoon of olive oil lightly over the arranged salmon slices. Spoon the herb mixture evenly over the top, ensuring every piece of salmon gets some of that herby goodness.

Finish with Capers: Scatter the crispy capers generously over the salmon and herbs, adding a delightful crunch.

Final Touch: Let the dish sit for a few minutes to allow the flavors to meld together before serving.
