1 pound smoked sausage, sliced

4 medium red potatoes, diced

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/4 teaspoon cayenne pepper (optional)

3 tablespoons olive oil

Salt and black pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

    Add the sliced smoked sausage to the skillet and cook for 5-7 minutes until browned and slightly crispy. Remove the sausage and set aside.

      In the same skillet, add the remaining tablespoon of olive oil. Stir in the diced potatoes and cook for 10 minutes, stirring occasionally, until they start to soften and turn golden.

        Add the diced onion and bell pepper to the skillet with the potatoes. Sauté for another 5 minutes until the vegetables are tender and the onion is translucent.

          Stir in the minced garlic, smoked paprika, dried thyme, and cayenne pepper (if using). Cook for 1 minute until fragrant.

            Return the cooked sausage to the skillet and mix everything together. Season with salt and black pepper to taste. Cook for an additional 3-5 minutes, allowing all the flavors to meld together and the sausage to heat through.

              Remove from heat and garnish with fresh parsley before serving.
