4 bone-in pork chops (about 1 inch thick)

Salt and pepper to taste

2 tablespoons olive oil

1 onion, thinly sliced

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini work well)

1 cup chicken broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

½ teaspoon smoked paprika

Fresh parsley for garnish

Season the Pork Chops: Generously season both sides of the pork chops with salt and pepper.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops. Sear them for about 4-5 minutes on each side, or until they are golden brown. Remove the pork chops from the skillet and set aside on a plate.

      Sauté the Vegetables: In the same skillet, add the sliced onion and garlic. Sauté for about 2-3 minutes until they are translucent and fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet, and continue to cook for another 4-5 minutes until they are browned and have released their moisture.

          Create the Gravy: Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. With the heat set to medium, stir in the heavy cream, Worcestershire sauce, thyme, and smoked paprika. Bring the mixture to a simmer, allowing it to thicken slightly, which should take about 5 minutes.

            Smother the Pork Chops: Return the pork chops to the skillet, spooning the mushroom gravy over them. Reduce the heat to low, cover the skillet, and let everything simmer for about 15-20 minutes, until the pork chops are cooked through and tender (internal temperature should reach 145°F).

              Serve: Plate the pork chops and generously spoon the creamy mushroom gravy over the top. Garnish with chopped fresh parsley for a pop of color.
