2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 cup unsalted butter, softened

1 1/2 cups white sugar

1 egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract

3/4 teaspoon salt

1/4 teaspoon cream of tartar

1/4 cup granulated sugar (for rolling)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      In a large mixing bowl, cream the softened butter with the white sugar until light and fluffy, about 2-3 minutes.

        Beat in the egg, vanilla extract, and almond extract until fully combined.

          Gradually add the dry ingredients to the wet mixture, mixing until just incorporated; do not overmix.

            Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.

              Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Dip each ball into the granulated sugar to coat.

                Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

                  Gently flatten each cookie with the bottom of a glass or your hand to about 1/2 inch thick.

                    Bake in the preheated oven for 8-10 minutes, or until the edges are slightly golden but the centers look soft and under-baked.

                      Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
